Creamy Italian Soup (raw)

This soup really hits the spot and is made with raw organic vegetables, cashews, and pignolias. It will warm you with its healthy goodness. Enjoy!

Raw Creamy Italian Soup

3 ripe organic tomatoes, medium size

1 mini sweet red pepper, seeds removed

1 mini sweet orange pepper, seeds removed

1 mini sweet yellow pepper, seeds removed

1 medium organic carrot

1 clove garlic

2-3 green onions

1 rib celery

1 TB fresh parsley, more if you like

2 basil leaves

1/2 cup chopped cashews

4 TB pine nuts

2 TB nutritional yeast

sea salt

freshly ground pepper

fresh oregano and thyme to taste

1/8 cup of spring water to help blend (the less you use the thicker it will be)

Blend together until smooth and creamy.

Garnish with a few raw pine nuts, cracked black pepper and some raw parma.

if i use a little warm water, it bet this would make a nice warming winter soup. yum!

Okay, I have to try this. I love soup, but have not yet been able to transition to raw soup..Thanks for the great recipe..will let you know how it comes out!
